Easy Loaded Potato Bites


20 small red potatoes (golf ball size)

1/2 cup corned beef

1/4 cup grated cheddar cheese

1 tablespoon of melted butter

1/8 teaspoon of salt

Sour cream, (optional)


Fill a large pot with water and bring it to a boil.

Add the potatoes and boil until tender.

Preheat the oven to 400 ° F

When the potatoes are cooked and cooled, cut them in half and cut a small slice from the rounded end so the potato can sit.

Spread the insides of each potato half, keeping the inside of the potato in a bowl.

Add cheese, corned beef, butter to a bowl with the potatoes stored inside.

Mix of salt to taste. Sprinkle a little salt on the potato halves as well.

Put the mixture in the potato halves, then place them on a baking sheet. 

Put  baking sheet in oven about 11 min .

Remove from oven and serve with a tablespoon of sour cream
